*Poured on our Czech Style Lukr Faucet*. Known as ‘tmave pivo’ in it’s homeland, this dark lager beer has notes of toasted bread crust, delicate milk chocolate and toffee with a crispy finish for maximum drinkability.

German Pilsner malts and German-grown Hallertau Mittlefruh hops deliver an experience as close as we can get without buying a plane ticket! Flavors of citrus, herbal spice, and a touch of melon make this a crushable pilsner, no passport required.

Brewed in collaboration with Ground Tap brewing out of  Saijo City on Shikoku Island in Japan for the Fuji to Hood fest. We used a traditional Saison base beer with Hallertau Blanc and Tettnanger hops for added citrus and spice notes, then added Satsuma and Blood Orange citrus. The resulting beer has bright citrus, clove, black pepper spice, and light bubblegum flavor profile. A nice refresher for the warm summer days we are seeing

Originally brewed for our 11th Anniversary, and inspired by some recent travels to Tokyo and beyond. This beauty is simply called, Akari. The Japanese word for "light", it oh so elegantly describes this one. Herbaceous and floral in the nose, followed by a honey like sweetness that finishes super bright, and, well...light. Kanpai!

Brewed with flaked corn reminiscent of your great great grandpappy's favorite chuggin' beer from the 1880s with notes of ripe fruit, fresh spring flowers and a touch of citrus in a beer made for drinkin'!

Stepping into our anniversary month with grace, and maturity. We are taking a straight shot at this one with all German Hops and Pilsner Malt with a perfectly rounded mouthfeel to balance the fruity, floral noble hops.12 years feels great, but we can wait for 12 more!

An exploration of Oregon Grown Ingredients bringing a nice peppery spice character from pilsner and rye malts with a conterpart of lemon and orange peel from Deep Cuts Cascade hops from Crosby Farms. A perfectly rounded lager with a refreshing hoppy punch.

Originally brewed for the 10th anniversary of Bailey’s Taproom in 2017, we brewed it again in memory of Bailey's, and in support of all the local taprooms keeping it local and supporting what we do. This crispy bloke hits like a Helles, with a more subdued hop profile and delightlfully sweet grain character giving it great body and flavor. Refreshing Light Lager with New Age American Hops Krush & Lorien. Flavors of Wildflowers and Lemon Zest with a kiss of Tropical Pineapple

This hazy lil’ pale ale is is the next big thing in flavor country! Brewed with loads of oats and wheat, this thing beams with kumquat, pineapple and creamsicle that’ll be sure to light up your day! Brewed with Citra, Cashmere and Comet hops.

Its lurks in the shadows, waiting to be discovered. If you have been wandering the earth looking for a dank, fruity tropical IPA that is full bodied but crisp...you have met your match. Citra, Sultana, Nelson Sauvin, Simcoe.

A magical blend of our favorite hops for IPA’s. Originally brewed in collaboration with Block 15 Brewing in Corvallis, OR, we loved it so much we decided to run it back for another round! Crisp, Dry West Coast IPA w/ a tart citrus, sweet fruit, and a touch of a tropical kiss in the finish.

Surprise, its the Gose you know and love, NOW WITH TEPACHE!. Originating in Mexico, Tepache is a Fermented Pineapple Drink with spices added. For this rendition, we used Cinnamon and Pineapple to bring home that traditional character to a briny, tart Gose. What we have here is a bright, tropical, refreshing beverage sure to satisfy all summer long.

Stepping back into the realm of secrecy to explore some new flavor profiles! Flavors of Dank Resin and Grapefruit with a touch of Tropical notes to round it all out. We have tried and true Simcoe with some New Zealand Riwaka. We utilized some Nelson Sauvin hops here as well to push forward the Southern Hemisphere vibes a bit more, with a perfectly rounded malt profile to carry this assertive hop profile along.

Crisp and Dry with a kick of Southern Hemisphere sass from Nelson Sauvin and Nectaron Hops. Flavors of Tropical Citrus and Dank Herbs.

An recipe from the early day, we took a more modern hop profile to bounce off the more traditional malt profile. Look for aroma and flavors of freshly baked bread, toffee, with some citrusy, piney hop kick. Classic OG at heart, hip and modern on the outside.

Beastly deep notes of bitter chocolate, charred bread and an epic depth of rich coffee. In the dead of night, darkness comes alive. The night howler wails death’s lullaby…

A Pacific Northwest homage to the ciders we love so much from Basque Country. Sagardo has the perfect balance of tropical fruit flavors, prickly acidity and funk, making it the ideal cider for the dinner table. Sagardo is fermented spontaneously in a mix of stainless steel and American oak foeders. Named Oregon Cidery of the Year 2022!

Hawk Haus is a blend of Jonathan and Yarlington Mill Apples. Pale, yellow-golden in color and lightly hazed with modest, tiny carbonation bubbles like the finest sparkling wines. The aroma is fresh cut apples and an earthy farmyard character. Hawk Haus is big, soft, and round on the palate with gentle acidity. The finish is just short of total dryness, with appealing fresh apple flavors from beginning to end.
